My first recipe, from August 2011
When you need a quick dressing for a couple of salads.
In blender, combine:
1 clove garlic
3-second pour of lemon vinegar (substitute: 1/2 lemon + white vinegar)
Generous pour of Extra Virgin Olive Oil (double the amount of vinegar)
About 1/2 tsp oregano
About 1/2 tsp dry mustard
Pinch salt and pepper
*Blend until fully pureed and there are no chunks.
This dressing will look and taste creamy, but there’s not a drop of mayo or over-processed ingredients to be found. Enjoy!
