No pork, no butter, just olive oil!

Rice:
1 cup rice
2 cups water
Sprinkle of sea salt
*Bring to a boil over high heat, then reduce to low until rice is fully cooked.

Meanwhile:
1 medium sweet onion, diced
*Saute in a small saucepan over low heat with a touch of olive oil, about 7-10 minutes

Then:
1 can red or black beans, rinsed
1 large tomato, diced (or large handful of cherry or grape tomatoes)
*When rice and onions are ready, combine with beans and tomatoes in rice pot.

Season:
Garlic powder
Oregano
Cumin
Cayenne pepper
1/2 lemon or lime, juiced
Salt & Pepper

Finishing Touch:
Add a healthy dose of extra virgin olive oil for richness and enjoy!
