Start with your favorite salad base of greens, tomatoes, carrots and other vegetables.  Enough to feed 2-4 people.

Dress it up with red or black beans, taco “meat”, spicy dressing, and chopped avocado.

Taco “Meat”
In food processor, combine:
1/2 cup almonds
1/2 tsp garlic powder
1 tsp cumin
dash salt
3 circles extra virgin olive oil
*Process until texture is coarse.  Optional seasonings – coriander, cayenne pepper, onion powder.

Spicy Dressing
In blender, combine:
2 tbsp soft tofu
1/2 tsp coriander
1/2 lime, juiced
5-6 second drizzle extra virgin olive oil
pinch salt & pepper
hot sauce to taste (I use 1 tbsp Sriracha or Cholula)
*Blend until creamy
